<p><P>PROBLEM TO BE SOLVED: To provide a method for producing a sake, which has a high alcohol yield by considering that trehalose or maltose has an aging-retarding action on starch and using trehalose or maltose properties. <P>SOLUTION: In the method for producing a sake comprising a process for using rice as a raw material and absorbing water in rice, a process for steaming water-absorbed rice to prepare steamed rice, a process for adding seed malt to the steamed rice to preparing malted rice, a process for adding the malted rice, yeast and water to the steamed rice to prepare a yeast mash, a process for adding the yeast mash, malted rice and water to steamed rice to prepare an unrefined sake and a process for separating the unrefined culture into a sake and sake lees, trehalose or maltose is added in the middle of the production process. <P>COPYRIGHT: (C)2008,JPO&INPIT</p> |
