<P>PROBLEM TO BE SOLVED: To provide confectionery such as cracker, dry bread and pretzel, free from becoming hard or having dry and crumbling palate feeling even if using only rice flour. <P>SOLUTION: A method for producing the confectionery such as cracker, dry bread and pretzel comprises molding confectionery dough having rice flour as the main raw material to a prescribed shape, passing the product through high-temperature steam atmosphere of <100°C for a prescribed time to preferentially pregelatinize starch on the surface, and performing either baking treatment, frying treatment, steaming treatment, microwave treatment or pressure treatment. <P>COPYRIGHT: (C)2008,JPO&INPIT |
