摘要 The present invention relates to a method for preparing a dairy analogue, and preferably a fermented dairy analogue using a bacteria culture containing lactic acid bacteria. The method is characterized in that all method steps are performed under animal-free conditions, including the isolation of the lactic acid bacteria and the adaptation of the lactic acid bacteria by growing these bacteria on a 100% vegetable isolation and adaptation medium, respectively. Said dairy analogue may be a vegetable food product, a vegetable food ingredient, or a vegetable functional food.
