ANHYDROUS CRYSTALLINE ß-MALTOSE, METHOD OF PRODUCING THE SAME AND USE THEREOF

It is intended to provide a novel anhydrous crystalline maltose, a method of producing the same and a use thereof. This object can be achieved by providing anhydrous crystalline ß-maltose having a melting point of from 154 to 159^oC, a method of producing the anhydrous crystalline ß-maltose as described above which involves the step of maintaining aqueous crystalline ß-maltose in an organic solvent at room temperature or higher to thereby dehydrate the same, and a use thereof.
