摘要 A bakery product in the shape of a multi-layered grid of short crust pastry filaments, and a process and an apparatus for the production of said bakery product are described. The process comprises the steps of: a) preparing at least one short crust pastry dough mixture (20) containing dietary fibers from 1% to 6 % by weight on the dough mixture weight and at least one phospholipid from 0.5% to 3% by weight on the dough mixture weight, b) forming, by extrusion of said at least one dough mixture (20), a number of superimposed layers (22,25) of short crust pastry dough mixture filaments (22a,25a) in which the filaments (22a,25a) of each layer (22,25) extend along a set direction and in which each pair of successively superimposed layers (22,25) have a different direction of extension of the respective short crust pastry filaments extension (22a,25a) so that each filament (25a) of the upper layer (25) of said pair of layers (22,25) crosses the filaments (22a) of the lower layer (22) of said layer pair, thus obtaining a semi-finished product in the shape of a multi-layered grid, c) cooking said semi-finished product in a baking oven. <IMAGE>
