A brake control method of a hybrid electric vehicle is provided to ensure the stability of control by preventing rapid changes of an oil pressure and an amount of regeneration braking. A brake control method of a hybrid electric vehicle includes the steps of: grasping a braking amount requested by a driver according to a stepping amount sensed in a brake switch by a pressing amount of a brake pedal by a brake control unit; calculating a maximum regeneration brake amount to provide the maximum regeneration brake amount to a regeneration brake control unit by the brake control unit; determining a regeneration brake amount based on a motor generation limit and a battery charging limit by the regeneration brake control unit; controlling an oil pressure of a brake so as to generate a hydraulic control torque having a value as large as a value acquired by subtracting the regeneration braking amount from the braking amount requested by the driver according to the determined regeneration braking amount by the brake control unit.
