A method of manufacturing mulberry cold noodles by mixing wheat flour, mulberry juice, water and refined salt is provided to obtain cold noodles, which has the efficacy of a mulberry while retaining the original taste of cold noodles. To make the titled noodles, 40 to 60% by weight of a flour mixture is kneaded with 8 to 18% by weight of rice flour, 1 to 10% by weight of mulberry juice, 25 to 35% by weight of water and 2 to 5% by weight of refined salt. The dough is extruded with a noodle making machine, cut to 30 to 40cm in length and semi-dried. The flour mixture contains wheat flour and starch.
