PROBLEM TO BE SOLVED: To provide a method by which an isoflavone aglycone having carcinostatic effects or prophylactic effects on osteoporosis can efficiently be produced and to obtain an ang-khak comprising the isoflavone aglycone. SOLUTION: This method for producing the isoflavone aglycone comprises inoculating a Monascus sp. into a raw material containing an isoflavone glycoside. The ang-khak comprising the isoflavone aglycone is obtained by preparing the Koji. |
