The invention relates to powder containing protein, the phenylalanine par t amounting to at least 30% (w/w), or at least 40% (w/w). It has been shown that powder containing phenylalanine is highly suitable, in terms of aerodyn amic behaviour and protein stabilisation, especially after spray drying, for producing powders or protein compositions with improved aerodynamic propert ies. The main constituent is phenylalanine and the optional other constituen t is an auxiliary agent, preferably a sugar or a polyol, which is highly wat er-soluble compared to phenylalanine.
