A device and a method for electric dehumidification using an instant evaporator are provided to carry out automatic dehumidification by the instant evaporator to keep sensed humidity to set humidity, and protect overheating or overcooling of each parts through comparison between sensed temperature and set temperature, thereby keeping proper temperature and humidity without deteriorating dehumidification efficiency due to the overcooling. A device for electric dehumidification using an instant evaporator includes a main controller(100) for comparing temperature and humidity sensed by each sensor(101,102) with set one to drive a dehumidification mode and instantly evaporating collected water outside. A manipulation display part(110) displays the sensed current temperature and humidity and the set humidity and temperature, and has user setting keys. A dehumidification unit(120) collects humidity in air by a heating part and a cooling part in response to the dehumidification mode driving. A cooling fan(130) cools heat of the heating part of the dehumidification part under the control of the main controller. The instant evaporator(140) drives an instant heating element to evaporate the collected water instantly outside.
