STABLE STARCH FOR CONTRIBUTING DIETARY FIBER TO FOOD COMPOSITION

PROBLEM TO BE SOLVED: To provide a modified starch by which a food composition may be harshly processed while retaining substantial content of dietary fiber.

SOLUTION: The invention relates to the use of the modified starch to increase the dietary fiber content of food composition processed under harsh conditions. By using certain modified starches, food formulation may be harshly processed while retaining substantial dietary fiber. Further, such modified starch provides dietary fiber without the negative effect on textural or organoleptic properties of the food composition which is typically associated with the addition of other dietary fiber source.
