An experimental and training unit for smoking sausages and meat products additionally comprises a smoke unit, mounted inside the unit, the function of which is performed by a heating chamber, a platform, wheels, a joint, brackets, a frame, spreaders, regulating couplings, fixing devices of shutters, nests, flanges, gaskets, clamps, a watch window. A system for supply of a smoke-air mixture is a set of horizontal sections, and a system for taking away the smoke-air mixture is a set of vertical sections; one of the horizontal sections is a heating section, and the other one a regulating section; one of the vertical sections is a smoking chamber, and the other a regulating section; and the regulating horizontal section and the vertical one arecompleted with shutters on the axles with fixing the positions of the shutters. The horizontal and vertical sections are fastened between each other and attached to the main section and to the joint by means of flanges with the gaskets and are fixed by the clamps. The sections are completed with jacks of an elastic material and a protecting film insuch a manner as to allow mounting measuring devices.
