A method of operating a water chiller (10) having a water tank (12), a cold water tap, a condenser and a fan (18) is disclosed. The chiller avoids freezing the water in tank (12) by switching between "normal" and "protection" operating modes. The switching between modes is initially triggered by checking the length of time since the cold water tap was last operated.
