<P>PROBLEM TO BE SOLVED: To provide oil and fat-containing instant processed food suppressed in oil separation or blooming during storage, or precipitation of ingredients other than oil and fat falling in oil and fat-containing instant food such as solid roux, and maintaining shine and luster at its surface. <P>SOLUTION: The oil and fat-containing instant processed food contains the following: (a) at least two kinds selected from glycerine fatty acid ester, diglycerol fatty acid ester and triglycerol fatty acid ester; (b) sorbitan fatty acid ester having ≥50 mass% of ≥22C saturated fatty acid based on 100 mass% of constituent fatty acid; and/or (c) polyglyceryl fatty acid ester having ≥50 mass% of ≥22C saturated fatty acid based on 100 mass% of constituent fatty acid and having an average polymerization degree of 4-10. <P>COPYRIGHT: (C)2008,JPO&INPIT |
