<P>PROBLEM TO BE SOLVED: To provide seasoning material having stable and favorable aroma/flavor of just-prepared stock inherent in dried fish, specifically fleshy aroma peculiar to the dried fish, and having high palatability and flavor inherent in dried fish. <P>SOLUTION: The method for producing seasoning material comprises the following process: extracting dried fish by at least one kind of technique selected from alcohol extraction, liquified carbon dioxide extraction, supercritical carbon dioxide extraction and steam distillation; adding at least one kind of sulfur compound selected from cysteine, cystine, methionine, gamma-glutamyl cysteine, cysteinyl glycine, glutathione and the salt thereof to the extracted substance from which residues caused after extraction are removed; and heating the sulfur compound-added extracted substance. <P>COPYRIGHT: (C)2008,JPO&INPIT |
