PROBLEM TO BE SOLVED: To provide a method by which a salt formed as a by-product during neutralization and an N-t-butyloxycarbonylamino acid can simply and efficiently be separated and the N-t-butyloxycarbonylamino acid can be produced in high yield even if the N-t-butyloxycarbonylamino acid has a hydroxy group when the N-t-butyloxycarbonylamino acid is produced. SOLUTION: The N-t-butyloxycarbonylamino acid is separated from an organic solvent solution containing the N-t-butyloxycarbonylamino acid, the salt and≥5 mass% of water. In the process, the water contained in the organic solvent solution is initially removed to deposit the salt contained in the solution. The deposited salt is separated and removed. A poor solvent is then added to the organic solvent solution from which the salt is separated and removed to deposit the N-t-butyloxycarbonylamino acid which is separated from a liquid phase.
