FIELD: canned food industry. ^ SUBSTANCE: method involves cutting chicken fillet and mixing with eggs, vodka, edible salt, and calcium glutamate or magnesium glutamate for producing of farce; forming farce and frying in melted fat for obtaining cutlets; cutting and freezing green onion; mixing with melted fat, bone soup, vodka, edible salt, calcium glutamate or magnesium glutamate and starch for producing of sauce; prepackaging cutlets, green onion and sauce; pressurizing and sterilizing. ^ EFFECT: provision for producing of canned food having increased digestibility in comparison with similar culinary dish. |
