The procedure consists of spraying the inner surface of each wafer cone (22) with an edible substance such as chocolate (23) in liquid form. The chocolate is applied in sufficient quantity to ensure there are no gaps in its coating, and any surplus that collects in the lower tip of the cone is extracted by a suction tube (6) and recycled back to the spraying system. The tip of the tube is sufficiently small to go close to the tapering end of the cone, and it has one or more orifices through which a gas flow is delivered after the suction process to clear them of any adhering particles. In addition, the tube slides up and down through a guide (7) which scrapes off any particles adhering to its surface.
