WHEAT FLOUR AND BAKED CONFECTIONERY USING THE SAME

摘要

PROBLEM TO BE SOLVED: To provide wheat flour enabling production of delicious baked confectionery without using any food additive and a specific method, and to provide baked confectionery using the wheat flour.

SOLUTION: The wheat flour is produced via mortar milling, and comprises wheat containing 15 mass% of granular fractions each having a grain diameter of ≥125 μm but <200 μm. The baked confectionery is produced by using the wheat flour.
