A method for preparing a fermented liquid ginseng-head composition by fermenting the head part of 6-year Goryeo ginseng is provided to help to cure circulatory system diseases, tumor diseases, chronic fatigue, etc., and to use the composition for a red ginseng drink, a ginseng head drink, various functional foods containing red ginseng or ginseng head, and health supplementary foods. A preparation method of a fermented liquid ginseng-head composition comprises the steps of: (a) washing ginseng head(the head part of ginseng), putting the ginseng head in water in a ratio of 100~250g of the ginseng head per 1L of water, and firstly aging the ginseng head at 7~22°C for 100~450hr; (b) cutting the firstly aged ginseng head, putting the ginseng head in water in a ratio of 150~450g of the ginseng head per 1L of water, and secondly aging the ginseng head at 85~100°C for 100~160hr so as to make a secondly aged ginseng-head composition; (c) and thirdly aging the secondly aged ginseng-head composition at 65~100°C for 100~200hr by using a double boiler comprising at least one cooling tower part so as to make a thirdly aged ginseng-head composition; and (d) removing solid sediments from the thirdly aged ginseng-head composition to obtain a pure liquid extract. In the step (c), the double boiler comprises a double-boiling part(200) which heats the secondly aged ginseng-head composition, a heat source(100) which is placed on the opposite side of the cooling tower part(300,400,500) and supplies heat to the double boiling part and a connecting part which connects the inside of the double-boiling part and the inside of the cooling tower part, wherein the average cross section of the connecting part is smaller than that of the double-boiling part and that of the cooling tower part. |
