<P>PROBLEM TO BE SOLVED: To provide a fading inhibitor inhibiting and preventing reduction of caking and fading preventing effects when the fading inhibitor is powdery and stabilizing a flavonoid-based compound in an aqueous solution and keeping quality maintenance over a long period by preparing the aqueous solution at pH3-5 when the fading inhibitor is liquid. <P>SOLUTION: The fading inhibitor of the natural pigment comprises at least one monosaccharide or saccharides obtained by combining at least two or more thereof (except the saccharides having ≥6 degree of polymerization and all the glucoses) and a flavonoid-based compound and a phosphoric acid-based compound. At least the one monosaccharide is selected from the group consisting of a sugar alcohol and/or glucose, galactose, erythrose, threose, ribose, arabinose, xylose, lyxose, allose, altrose, gulose, idose, talose, mannose, fructose and ribulose. <P>COPYRIGHT: (C)2008,JPO&INPIT |
