PROBLEM TO BE SOLVED: To provide a method for producing a specific water-soluble polysaccharide, suitable for an industrial production. SOLUTION: The method for efficiently producing a water-soluble polysaccharide derived from Laetiporus sulphureus extracellularly comprises adjustment of pH≤2.0 in a liquid culture of a Laetiporus sulphureus mycelium.
