A composition comprises a continuous aqueous phase, a dispersed lipid phase comprising principally a crystallizable oil and solid colloidal particles as a stabilizing agent. An independent claim is included for preparation of the new composition by contacting the aqueous phase and lipid phase in the presence of functionalized solid colloidal particles and submitting the emulsion to mechanical stirring.
