摘要 FIELD: food processing and pharmaceutical industries. ^ SUBSTANCE: claimed method includes raw material preparation by bagasse separation. Bagasse is blended with water and fed into water duty for cavitation treatment at pH 2.8-3.6. Obtained mixture is discharged from water duty, separated by vacuum filtration and separated into pectin extract and pectin-containing edible fibers. Said edible fibers are pressed to separate mash and desiccated by convective drying. Mash is recycled in water duty; water is blended with bagasse and mash in bagasse:(water+mash) mass ratio from 90:10 to 75:25; pectin extract is filtered and separated again. Extract is fed in microfiltration step and ultrafiltration step at pectin extract flow rate of 0.12.5 m/s and pressure of 0,1 MPa to separate vitamin- and pectin-containing beverage. Further extract containing 3 % of dry matters is boiled and dried in vacuum in foamed state under IR heating at product temperature of 40-50°C and under rest pressure in drying chamber of 2.7-5.5 MPa. ^ EFFECT: product of improved quality and increased yield. ^ 1 dwg, 3 ex
