In a roller mill for comminution of an in particular viscous or pasty compound into a fine substance, in particular in a fine roller mill, which is connected upstream of a conche, for forming a fine chocolate substance from a compound comprising sugar, a cocoa constituent such as cocoa powder, cocoa butter or the like, comprising at least two rollers which include one intake roller, which receives the compound for forming a compound layer, and an output roller, which is arranged downstream in the direction of transportation of the compound layer as the last roller of the roller mill and outputs the fine substance for further processing, wherein two of the at least two rollers form a pressure region at which a pressure load is applied to the substance, provision is made for the output roller to have an associated heating device such that, during the residence time of the compound layer on the output roller, heat from a heating medium which is external to the compound layer passes to the compound layer. |
