PROBLEM TO BE SOLVED: To provide a method for producing polyphenols such as a high purity vanillin, etc., from the feces of a plant-eating animal easily and inexpensively, and methods for producing vanillin, protocatechuic acid and vanillic acid. SOLUTION: This method for producing the polyphenols comprises a process of treating the feces of the plant eating animals at 100 to 300°C with water in a semi-critical state.
