摘要 A method for manufacturing red ginseng-added Korean cookies is provided to prevent acidification of oils generated during a making process of Korean cookies by adding a white ginseng powder and a red ginseng extract. A method for manufacturing red ginseng-added Korean cookies using a white ginseng powder and a red ginseng extract includes the steps of: (1) providing glutinous rice, a white ginseng powder, a red ginseng extract, a red ginseng concentrate, starch syrup, and sugar; (2) soaking the glutinous rice in water, fermenting the soaked glutinous rice to make a fermented material, dehydrating and grinding the fermented material to obtain glutinous rice flour; (3) adding 0.5-2wt% of the white ginseng powder and 8-12wt% of the red ginseng extract to the glutinous rice flour based on the weight of the glutinous rice powder, mixing the admixture, and kneading the mixture to form dough while adding water to have a final water content of about 15-25%; (4) steaming the dough, putting the steamed dough into a kneader, kneading the dough, and forming the dough into flattened dumplings; (5) drying and aging the flattened dumplings, and frying the dumplings in oils to obtain fried dumplings; (6) mixing the starch syrup with sugar, boiling the mixture to obtain a solution, thereto adding a red ginseng concentrate, and mixing the admixture to obtain a sugar solution; and (7) coating the fried dumplings with the sugar solution, and covering the coated dumplings with popped rice to produce red ginseng-added Korean cookies.
