<P>PROBLEM TO BE SOLVED: To provide processed water suppressing oxidation; to provide a device for producing the processed water; and to provide a processing/pickling method. <P>SOLUTION: The device for producing processed water comprises a nitrogen gas cylinder (or a nitrogen gas extractor extracting nitrogen gas in open air), a processed water tank storing processed water used for processing/pickling of fresh food together with objective fresh food to be processed, and a nitrogen gas dissolving container dissolving the nitrogen gas extracted from the nitrogen gas extractor in the processed water in the processed water tank. The processing/pickling method comprises mixing the nitrogen gas with the processed water used for the processed pickle of the fresh food, charging the fresh food into the processed water, and further mixing the nitrogen gas with the processed water charged with the fresh food. <P>COPYRIGHT: (C)2008,JPO&INPIT |
