<P>PROBLEM TO BE SOLVED: To provide a method for producing an extremely highly usable unconventional Salacia reticulata ingredient-containing health food, capable of extremely efficiently extracting a large amount of active ingredient contained in Salacia reticulata, and bringing the extracted active ingredient to a condition allowing extremely easy absorption in the body so as to extremely excellently demonstrate the various excellent effects of active ingredient contained in Salacia reticulata, compared to conventional unfermented Salacia reticulata, and dissolving pigment of Salacia reticulata to avoid coloring when mixing with a food material. <P>SOLUTION: This method for producing the Salacia reticulata ingredient-containing health food comprises fermenting Salacia reticulata in a solution containing at least low-temperature, middle-temperature or low/middle temperature fermentation type yeast at ≤30°C and bring the fermented liquid thus obtained to the health food. <P>COPYRIGHT: (C)2008,JPO&INPIT |
