PROBLEM TO BE SOLVED: To provide a digestive enzyme reaction-inhibiting/retarding agent containing a polysaccharide having an adjusted average mol. wt. SOLUTION: This digestive enzyme reaction-inhibiting/retarding agent containing the polysaccharide is characterized in that (a) G" > G' in a frequency (angle rate) range of 0.1 to 100 rad/s, and (b) a complex viscosity coefficientη*=(G'<SP>2</SP>+G''<SP>2</SP>)<SP>1/2</SP>/ωexhibits a Newtonian balance, whereinη* is <1 Pa s. Therein G', G" andωrepresent a storage elastic modulus, a loss modulus, and a frequency (angle rate), respectively, when the dynamic viscoelasticity of a 1 wt.% aqueous solution of the polysaccharide is measured with a dynamic viscoelasticity measurement device ARES (manufactured by a certain company) equipped with a 50 mm diameter conical-flat type jig at 20°C.
