A process for producing a purified green tea extract comprising mixing a green tea extract, which has been treated with an enzyme having a tannase activity, with a liquid mixture having a mass ratio of an organic solvent to water of 60/40 to 90/10, and separating the precipitate thus formed. Namely, a process for producing a purified green tea extract, which contains non-polymerized catechins at a high concentration, shows a relieved bitterness/astringency, has an improved taste achieved by reducing miscellaneous flavors caused by dietary fibers originating in green tea, has a lowered protein content and is easy to drink, from a green tea extract. |
