<P>PROBLEM TO BE SOLVED: To provide a method for stabilizing citral, free from decreasing citral even in sterilizing, preserving and light irradiating to citral-containing acid drink, producing no off-flavor of p-cymene-8-ol, p-methylacetophenone or the like, and giving no influence to taste. <P>SOLUTION: This method for stabilizing citral in the citral-containing acid drink comprises addition of an excessive amount of cyclodextrin compared to a molar quantity of citral. <P>COPYRIGHT: (C)2008,JPO&INPIT |
