<p><P>PROBLEM TO BE SOLVED: To provide a microchannel structure producing microparticles, being applied to industrial mass production, hardening the microparticles immediately after their production without deforming the shape of the produced microparticles, and separating the microparticles from a medium, and further provide a microparticle production method using the microchannel, and a solvent extraction method by the microchannel. <P>SOLUTION: The microchannel structure comprises a microchannels including an inlet port and an inlet channel for introducing a dispersing phase, an inlet port and an inlet channel for introducing a continuous phase, and a discharge channel and a discharge port for discharging the microparticles produced by the dispersing phase and continuous phase, wherein the inlet channel for introducing the dispersing phase and the inlet channel for introducing the continuous phase cross at an arbitrary angle, the two inlet channels are connected to the discharge channel at an arbitrary angle.
