<P>PROBLEM TO BE SOLVED: To provide a beverage that has improved flavor and quality such as occurrence of precipitation, as the concentration of catechin having high biofunction is maintained high. <P>SOLUTION: In the method for producing the beverage, unfermented tea leaves, semi-fermented tea leaves or fermented tea leaves are extracted with water or hot water at a temperature from 40°C to 100°C and the ester type catechin and the free type catechin are removed by 50 to 100mass% from the obtained extract and the tea extract is added thereby obtain the beverage that can adjust the mass weight ratio between the ester type catechin and the free type catechin. <P>COPYRIGHT: (C)2007,JPO&INPIT |
