摘要 A glycosyltransferase derived from Bacillus cereus, a gene thereof and a method for preparing the same enzyme are provided to produce flavonoid glucoside having reduced cytotoxicity and increased chemical stability, thereby easily absorbing the flavonoid glucoside to the living body. A gene encoding glycosyltransferase derived from Bacillus cereus comprises a part of or the total of the nucleotide sequence set forth in SEQ ID NO:3. A method for preparing the glycosyltransferase derived from Bacillus cereus comprises the steps of: (1) constructing a recombinant vector pET15b containing the glycosyltransferase gene; (2) transforming a microorganism with the recombinant vector PET15b to produce the transformed microorganism Escherichia coli BL21 pET15b(KACC 95050P); (3) culturing the Escherichia coli BL21 pET15b(KACC 95050P) to induce expression of the enzyme protein; and (4) isolating and purifying the enzyme protein. A flavonoid glucoside is produced by reacting glucose as a substrate with the glycosyltransferase.
