YEAST NEW STRAIN, SACCHAROMYCES CEREVISIAE ADS-11 KACC 93043P AND A METHOD FOR PREPARING FERMENTED LIQUOR USING THE SAME

A Saccharomyces cerevisiae ADS-11 with excellent glucose-resistance and alcohol-resistance isolated from a traditional fermented liquor is provided to produce highly concentrated ethanol even under highly concentrated glucose and highly concentrated alcohol conditions as well as conventional alcohol fermentation. A Saccharomyces cerevisiae ADS-11 capable of being grown under the glucose concentration of 10-40 wt.% and the ethanol concentration of 7-11 vol/vol.% in a culture medium and having excellent glucose-resistance and alcohol-resistance is deposited as a deposition no. KACC 93043P. A method for preparing an alcohol using yeast comprises a step of culturing Saccharomyces cerevisiae ADS-11 KACC in a fermentation culture medium including 2-40 wt.% of glucose.
