A method of manufacturing scorched rice using near-infrared rays from a near-infrared lamp is provided to produce the scorched rice within a short time and prevent grain from adhering to the bottom of a container by preventing carbonization of grain at the bottom part of the container. Grain is soaked in water, put into a container and heated with a near-infrared lamp which emits heat of 1,800 to 2,200deg.C for 5 to 10sec. A scorched rice-producing apparatus comprises: a hopper(1) for supplying a constant amount of soaked grain(100); a container(10) for receiving the grain; a vibrator(20) for vibrating the grain in the container; a conveyor belt(30,40) for transferring the container; a stepping motor for conveyor belt; and a near-infrared lamp(200) for emitting a near-infrared ray.
