PROBLEM TO BE SOLVED: To obtain a starch composition useful for a wider use by remarkably improving physical properties of starch by using a simple and economical method. SOLUTION: The starch composition having remarkably improved mechanical properties is obtained by making a water-soluble inorganic salt having crystal water or a water-soluble organic salt having crystal water coexist in starch and crosslinking the starch with a crosslinking agent.
