The procedure for removing the husk and/or the seed coat and the seedlings of brewing grains, comprises cleaning the cereal grains, supplying the grains to a malt process, peeling the grains, and grinding and polishing the grains. Plumule is removed along with the peeling. The peeled fraction accrued in the peeling is separated and is led back partially into the purifying process. The peeled cereal grains are grinded in a double grinding step. The grinding is a wet- or dry grinding. The remaining extract of the husk is removed separately. An independent claim is included for plant for removing the husk and/or the seed coat and the seedlings of brewing grains.
