An exhaust system of a v-type engine and a control apparatus and method thereof are provided to increase an engine load by using one bank. An exhaust system of a v-type engine includes a first exhaust pipe(109), a second exhaust pipe(111), a catalyst unit(115), a center muffler(116), a by-pass pipe(93), and a variable valve. The first exhaust pipe is connected to an exhaust pipe of a first bank side of the V-type engine. The second exhaust pipe is connected to an exhaust pipe of a second bank side. The catalyst unit is connected to both ends of the first and second exhaust pipes. The center muffler is connected to a lower portion of the catalyst unit. The by-pass pipe by-passes exhaust gas exhausted from a second bank to the center muffler. The variable valve is connected to the second exhaust pipe and the by-pass pipe.
