Chopped vegetables or fruit pulp are pumped continuously through a cooled scraped surface heat exchanger, which freezes sufficient water in the material to render it extrudable, and thereafter the material is extruded. Preferably the material is first passed through a coaxial and then through an offset scraped surface heat exchanger, such as those described in Specifications 649,324 and 842,310. The extruded rod may then be cut into pieces, packed, and cold stored, or prior to being cut it may be passed through a plate or tunnel freeze. Alternatively, the extruded rod may be passed through an accelerated freeze drier and then packed. Air or an inert gas may be injected into the material entering the heat exchanger. |
