<p><P>PROBLEM TO BE SOLVED: To provide Shochu much containing 4-vinyl guaiacol (abbr. 4-VG) or vanillin, capable of converted to flavor-preferable Shochu having sweet smell and mature feeling due to much vanillin content, and to provide a method for producing the Shochu. <P>SOLUTION: The method for producing Shochu much containing 4-VG is provided by using C14 strain or No. 15 strain belonging to saccharomyces/cerevisiae. The method for producing Shochu much containing vanillin comprises producing Shochu by the method, and then, storing the distillate thereof on a condition of≥0.2 mg/L copper ion concentration in the distillate when storing the distillate.
