摘要 PROBLEM TO BE SOLVED: To provide a method for producing dimple-type chou confectionery comprising using a chou coat prepared in a simple production, and enabling production of such chou confectionery that charged filling is visible from outside so as to make the outer appearance of the confectionery look beautiful. SOLUTION: The method for producing dimple-type chou confectionery comprises placing hydrated filling having heat-resistant shape retainability or inedible weighing material having heat-resistant shape retainability and impregnated with water, on the upper face of chou dough, and baking the chou dough. The heat-resistant shape retainability is kept in≥20 wt.% when baking the chou at 180°C for 10 min.
