<P>PROBLEM TO BE SOLVED: To simply prepare a mixture in which liquid is homogeneously dispersed and a kneaded product having high viscoelasticity and produce a kneaded product having high viscoelasticity excellent in taste, palatability and the like by preventing overmixing caused by excessive shearing force even in case of weak dough. <P>SOLUTION: The kneaded product 20 having high viscosity is produced by housing a raw material 10 to be kneaded in a vessel 11 of a kneading device 2, rotating a rotor 15 of a mixing and kneading member 12 in the lower part of the vessel 11, forming small lumps 60 of admixture by moving the raw material 10 to be kneaded upward by rotating between the inner wall and an agitation bar 16 extending upward from upper periphery of the rotor 15 toward the inner wall direction of the vessel, scraping the small lumps of the admixture in the lower part of the rotor 15 up to above a scraping unit 17, at the same time or just before or after, thickening the admixture 20 by adhering the small lumps 60 of the admixture outside of the admixture 20 in a space 22 and mixing and kneading by giving stress to the outer periphery of the admixture 20 in the space 22 between the upper central part of the rotor and a middle lid 27. <P>COPYRIGHT: (C)2008,JPO&INPIT |
