The invention concerns a novel method for extracting and separating aromatic oils enabling aromatic oil constituents to be extracted and separated without exposing them to the action of water or solvents. The product is thus more natural. The novel method is based on the fact that evaporation of the aromatic oils can be accelerated by speeding up the hot gas circulation which stirs the exchange surface between the raw material and the external medium. The extraction unit consists of an evaporator (I) wherein the stirring occurs, a pump (2), a condenser (II) and a manifold (III). After evaporation the aromatic oil-saturated gas leaves the evaporator (I) via the filter (I) under the sucking effect of a pump (2) and is condensed in the condenser (II), the aromatic oil constituents are recovered in the manifold (III) depending on their volatility. The oil-free air is recycled to the evaporator through the channel (3). The evaporator is heated by a controlled heating system (4) which may be an electric resistor, a hot fluid flow channel.
