<P>PROBLEM TO BE SOLVED: To provide a water-in-oil type oil and fat composition formulated with sterilized/frozen sugar-added frozen egg yolk and subjected to sterilization, used for bread to improve its soft feeling even in a refrigeration area: and to provide a method for making bread comprising the composition by which soft bread is made in spite of addition of powdery raw material without using a food additive. <P>SOLUTION: The water-in-oil type oil and fat composition is mixed with frozen sugar-added egg yolk and sterilized so as to make the bread soft even when refrigerated. The method for making bread comprising the composition makes bread have soft feeling in spite of use of powdery raw material, and prevents the bread from getting aged. <P>COPYRIGHT: (C)2008,JPO&INPIT |
