摘要 <P>PROBLEM TO BE SOLVED: To provide a water-in-oil type oil and fat composition formulated with sterilized/frozen sugar-added frozen egg yolk and subjected to sterilization, used for bread to improve its soft feeling even in a refrigeration area: and to provide a method for making bread comprising the composition by which soft bread is made in spite of addition of powdery raw material without using a food additive. <P>SOLUTION: The water-in-oil type oil and fat composition is mixed with frozen sugar-added egg yolk and sterilized so as to make the bread soft even when refrigerated.
