A method to prepare a sauce of elderberries includes washing, inspection, blanching, making puree of the elderberries, mixing the recipe components, thermal processing and finishing. To the recipe components are added leaves of blackberry or cherry, or elder flowers, or thyme and orchis root, the product thermal treatment is carried out in pasteurization mode (at temperature of 80...85 DEGREE C during 8...10 min.); finishing is made once after introducing additives and thermal treatment. |
