Provided is a method for preparing a flatfish treated with yellow soil to inhibit the fishy smell and acidification during circulation and to allow the water content to be maintained to be constant even if the flatfish is stored for a long time. The method comprises the steps of salting a flatfish in an antibacterial agent comprising a salt water of filtered yellow soil, an organic acid and ethanol; drying the flatfish; soaking the flatfish in the mixture comprising a salt water of filtered yellow soil and a sugar alcohol; and drying the flatfish. Preferably the sugar alcohol comprises at least one selected from the group consisting of sorbitol, maltitol and hydrogenated starch syrup; the organic acid comprises at least one selected from acetic acid, citric acid, tartaric acid and benzoic acid; and the salt water of filtered yellow soil comprises a filtered yellow soil water where 8-15 % refined salt is dissolved, 3-5 % of an organic acid, and 3-5 % of ethanol. |
