<P>PROBLEM TO BE SOLVED: To provide a releasing oil composition applied to a baking mold when producing food through charging food dough in the baking mold and heating the dough, to make food have crusts with favorable palate feeling (crispy feeling and meltability in the mouth), and preventing lost of the crispy feeling when the heated food is stored for a long time, frozen/thawed, stored while heated, or heated with a microwave oven. <P>SOLUTION: The releasing oil composition contains ≥5 mass% of β-type oil and fat crystals directly in an oil phase, an interesterified oil produced by using perm-based oil and fat, and an emulsifier. Food is produced by using the releasing oil composition, through applying the composition to the baking mold, charging food material in the baking mold, and heating the dough. <P>COPYRIGHT: (C)2008,JPO&INPIT |
