The human diet is basically low in dietary fibre. Vegetables in general, and nopal in particular, are natural sources with a rich dietary fibre content, nopal being advantageous in that it contains high amounts of insoluble and soluble fibre. The present invention refers to a process for mixing nopal flavour, and/or derivatives thereof, together with refined and/or integral cereal flours such as maize, wheat, oat and further vegetable products, if required, for obtaining particular food products due to their high nutritional fibre content and other nutrients. Furthermore typical battered and breaded formulations may be substituted by nopal flour and/or derivatives thereof, as well as products manufactured by the aforesaid processes such as breaded meat, fish, seafood, vegetables etc.
